Organic Sunrise Red Lentils

I can’t say enough good things about them. I learned about them through reading the Lentil Underground when it came out in 2016. Timeless Foods has been doing for decades in the Great Plains what we aspire to do in the valleys of the Green Mountains. I highly recommend the book.

Cultivation of lentils (Lens culinaris) dates to the first eight "Founder Crops" domesticated in the Fertile Crescent about 10,000 years ago.
As lentils were farmed, they were grouped into two seed sizes: small seeds measuring 3-5 millimeters and large seeds of 5-7 millimeters in size. Our Sunrise Red Lentils are larger seeds while our Petite Crimson Lentils fall into the smaller group.
Historically lentils were so important that the Romans named their emperors after the most common legumes: Lentilus (lentil), Fabius (fava), Piso (pea), and Cicero (chickpea).
Decorticated (having had the skins removed) lentils cook very quickly and are perfect for dal, lentil hummus, thick lentils soup, or as an ingredient in all sorts of crackers, cookies, cakes, and other desserts.
