The Tiger's Eye bean is a South American heirloom dry bean, known for its beautiful appearance with a creamy yellow-to-amber skin and dark maroon swirls, resembling a tiger's eye gemstone, offering a rich, nutty flavor and creamy texture with very tender skin that almost disappears when cooked, making it excellent for soups, chili, stews, and refried beans.
