Pink Eye Purple Peas

Like other southern peas, they are a staple in Southern cuisine and can be used interchangeably with black-eyed peas in most recipes. They are often simmered with ingredients like bacon or fatback, served with rice and cornbread, and are a traditional part of New Year's Day meals for good luck. They can also be pickled, fried, or used in dishes like hummus.
